LITTLE ROCK, Ark. (KTHV) -- On today's show we're going to show you a healthy crock-pot recipe that you can enjoy.
Justin Benton, a health educator with Baptist Health, will join Ashley, Alyse and Tom.
Crock-pot vegetable chicken soup
1 Whole Wheat Tortilla cut into several small strips (0 calorie butter spray if desired)
1 cup chopped celery
1 cup shredded carrots
1/2 cup diced red onion
1 tsp light choice olive oil
1 can black beans (rinsed and drained)
2 cans of cubed chicken breast
15 oz low sodium beef broth
15 oz low sodium chicken broth
1 1/2 cups water
1 can of corn
2-3 tsps dried parsley flakes
3 tsps garlic powder
2 tsps dried basil
2 tsps ground cumin
Put all ingredients in the crock pot, cook on high for 6-8 hours.
This will yield about 10-15 servings and the calorie count per serving will be approximately 170-200 calories.
